    If you think soup is a "light lunch," you haven't been to El Burgo.

    In the Sierra de las Nieves, food has never been about trends. It has been about survival. When you are working the fields for 12 hours a day, you don't need a garnish; you need fuel.

    Every February, the village gathers to cook the Sopa de los Siete Ramales (Soup of the Seven Branches). It’s a dish born out of scarcity. In the past, the "seven branches" were just whatever the land gave you that week: asparagus from the roadside, onions, garlic, peppers, tomatoes, bread, and egg.

    But the engine of the soup? Olive Oil.

    They cook it in massive cauldrons right on the street. They don't measure with teaspoons; they pour with buckets. The bread soaks up the broth and the oil until the soup is so thick you can stand a spoon up in it.

    It’s ugly. It’s messy. And it is absolutely delicious.

    This festival reminds us of the golden rule of Andalusian cooking: You don't need expensive ingredients. You need great produce, good oil, and a lot of patience.
